Ingredients 4-5 lbs Cold River Gold potatoes 11⁄2 Cups whole milk 1⁄2 Cup heavy cream 2 Tablespoons butter 1 Cup smoked gouda cheese, grated 1 Cup fontina cheese, grated 2 tsp salt 1 tsp pepper 2 cloves garlic, peeled 3 or 4 sprigs of fresh thyme Directions Pre-heat oven to 350 degrees. Butter a deep 9×13 baking dish. Put milk, cream, garlic, thyme, butter, salt, and pepper in a saucepan and simmer over very low heat for 20-30 minutes.
