Potato Storage Information
- Store potatoes in a cool (45-50 degrees Fahrenheit) dark place with good ventilation. Do not store potatoes in your refrigerator. Potatoes that are stored below 40 F will develop a sweet taste due to the conversion of starch into sugar and will also cause the potato to develop a dark appearance when fried.
- Potatoes will develop greening and a bitter taste when exposed to prolonged light.
- Refrigerate any leftover potatoes within 2 hours after cooking.
- Potatoes can be stored in cold weather to prevent discoloration, but not for more than 2 hours.
