Smoked Trout Bean Dip using leftover Jacob’s Cattle Beans

What do you do with leftover Instant Pot Jacob’s Cattle Beans? Make Smoked Trout Bean Dip! Jacob’s Cattle Beans are also called Trout Beans in some parts of the U.S. I hope you’ll love this quick easy Smoked Trout Bean Dip! (Dip pro-tip: I love Smoked Trout Dip with crackers.)

Ingredients:

  • 2 Cups cooked Trout Beans
  • ¼ Cup mayo
  • ¼ Cup sour cream or plain yogurt
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. finely ground Apple Smoked Salt (check your local health food store)
  • 3 Tbsp. fine chopped green onions + a sprinkle for garnish
  • 1 tsp. dried dill + a sprinkle for garnish
  • Olive oil to drizzle

Tony’s Tip: A coffee grinder works well to grind coarse salts into fine grind or dust if you grind too long!

Method:

Place beans in a food processor or blender with all ingredients but the olive oil and garnish. Blend until mixed and slightly chunky. This dip should not be smooth.

Adjust seasonings and remove from the blender to a serving plate or bowl. Garnish with a sprinkle of dill and chopped green onions, cover and chill for an hour or more to allow flavors to mingle. Drizzle olive oil on top and serve with Ritz crackers and assorted raw vegetable strips.
