Bean Dip using leftover Instant Pot Soldier or Yellow Eye Beans

What do you do with leftover Instant Pot Soldier or Yellow Eye Beans? Try this EASY recipe for delicious bean dip!


  • 2 Cups of cooked Soldier or Yellow Eye Beans
  • 1 Tbsp lemon juice
  • 1 small crushed garlic clove or ½ tsp. granulated garlic
  • ¼ cup Tahini
  • 2 Tbsp. olive oil plus some to drizzle
  • 1 Tbsp. water
  • Scant pinch of paprika
  • Sea salt to taste


Put all ingredients in a blender and blend until smooth. Adjust consistency with water if necessary. Taste and adjust seasoning if you like.

Place dip in a serving bowl or on an appetizer tray, and drizzle olive oil on the dip. Serve with lavash crackers, bagel chips, warm pita triangles, carrot, cucumber, celery and/or green pepper strips. Yummo!
